BBQ Salmon with Roasted Vegetable Cous Cous

BBQ Salmon with Roasted Vegetable Cous Cous

(Serves 2)

Ingredients

½ tsp (approx.) Fish Seasoning

½ tsp (approx.) All Purpose Seasoning

½ tsp (approx.) Mixed Herbs

½ tsp (approx.) Black Pepper

3-5 Sprays of Cooking Oil (Sunflower or Olive Oil)

2-4 tbsp BBQ Sauce (Depending on size of fillets)

2 Salmon Fillets

100g Packet of Roasted Vegetable Cous Cous

160ml Hot Water

 

Directions:

BBQ Salmon

Preheat the oven to 200°C/392°F

Season the Salmon fillets with the Fish seasoning, All Purpose seasoning, Mixed Herbs and Black Pepper.

Lay foil on top of a baking tray.

Spray the cooking oil all over the foil to stop the fish from sticking.

Place Salmon on to the foil and squeeze the BBQ sauce on top.

Fold the foil over the Salmon into a parcel. Make sure you fold up the sides.

Place the Salmon in the oven on to the middle shelf and set the timer for 15 minutes.

When the timer goes off, take the Salmon out of the oven and turn over the Salmon. Add more BBQ sauce if needed.

Place the Salmon back into the Oven for another 10-15 minutes.

Once fully cooked serve with the Roasted Vegetable Cous Cous and Salad.

 

Roasted Vegetable Cous Cous

Place the contents of the packet into a bowl.

Pour over the 160ml of hot water.

Stir the Cous Cous with a fork to ensure all the grains are covered with water.

Let it stand for 5 minutes or until all the water has been absorbed.

Once the water has all been absorbed, then fluff the grains up with a fork making sure there is no water left.

Serve with BBQ Salmon and Salad.

Top 10 Tips for Moving

Moving has to be one of the most stressful things you can ever do…especially when you have children! It’s difficult to remain stress free when you’re trying to get all you belongings safely from one destination to another; however I have listed below my Top 10 Tips for moving:

-Do one room at a time. It’s best to start with the front room. Pack away anything that will not be needed immediately or within the weeks leading up to your moving date.

-Clear out at the same time as packing. You will come across lots of stuff that you may have forgotten about and are no longer needed; this is especially true if you have children. Clear out and give away or to charity any toys, clothes, shoes or books that they no longer can utilise.

-When packing make sure you keep all the things for each room in the same box and mark each box. This will make it easier to unpack.

-If you have an Ikea nearby they do excellent bags for 40p that can fit nearly anything in. I used them for mine and Ky’s shoes, coats and bedding. They also do great boxes for 80p which you put together yourself and they are very sturdy. I used them for books, paperwork and general bits and bobs.

-Pack an overnight bag! After moving the last thing you want to do is look for your night clothes, toiletries or even clothes for the following day.

-Mail Redirection – If like me you have to move with little notice and you do not have the time to inform anyone of your new address then Royal Mail offer a First Class Redirection service for your mail. You can do it for 3 months to a year and the cost varies depending on which package you choose. (This applies to UK residents only). Check your local Post Office or online at royalmail.co.uk for more details. If you live outside of the UK then check with you mail service provider.

-If you have children get them to pack a bag with stuff that will keep them entertained during the move and for the first few days until you can unpack their stuff/toys.

-Inform any service providers such as Sky or Virgin Media that you are moving and depending on whether your new property has previously had services installed you may be able to get the services the same day you move or they will give you a installation date.

-Take Gas and Electricity Meter readings. On your moving day ensure that you note down the meter readings for both your old and new address. This is so that you can inform any energy providers, to ensure that you get billed correctly and are not charged for energy you did not use!

-Enjoy! Yes I know that can sound crazy but try to enjoy the idea of a new start and change. I think you can so easily be caught up in the stress of moving that you forget to live in the moment and excitement.

I hope all or some of my tips will help you prepare for moving. They definitely helped me and made moving at lot less stressful than I first imagined it would be .Ky and I are settling in nicely and at current are decorating so that we can feel even more at home.

My Lessons from 2015

Happy New Year!!

I know its 18 days into the year but when is it, officially not OK to say Happy New Year….

2015 was an incredible year filled with both many highs and lows but as the year progressed I learnt so much about myself and I am finally becoming happy with who I AM!

I thought I would share with you some lessons I learnt in 2015! Hopefully they will be of some help to you.

So let’s not waste any more time and get started….

My 2015 Lessons

Live your dreams to the fullest

Quite Simply DO NOT hold back on your dreams. Even if you are in the process of making those dreams happen, then live each day as if you can feel those dreams are real and your current reality!

Let Go and Let God

Many times we have situations that arise in our lives that we have to acknowledge and understand that we have no control over. We have to stop trying to fix the situation and just have faith that everything will work out as it is meant to.

Now I can appreciate that not everyone believes in God or is religious but when I say God, I basically mean trusting in whatever you believe and just letting the situation GO!

Be POSITIVE!

Clique I know but this is what everyone should live by! The key is not to just be positive but to speak and think nothing but positivity. Life can serve you difficult hurdles and curve-balls and can lead a person to believe that they are having a bad day. It is important however to always remain positive especially on these days. The lesson here is to look at what you are being taught from these hurdles or curve-balls and to understand that everything happens for a reason.

Keep DIRTY feet out your mind

The Great Mahatma Gandhi once said “I will not let anyone walk through my mind with their dirty feet.”

When you have a great idea/plan your initial reaction is to tell everyone or share it with everyone, colleagues, friends and family. However I have definitely learnt that this is not always the best thing to do. Sometimes the moment you tell someone about your great idea/plan they instantly tell you everything they believe is wrong with the idea/plan or everything they see going wrong with your idea/plan. At times this can be a conscious effort to sabotage you and sometimes it can be subconscious. Some people don’t even understand that they are always operating from a place of fear….fear of failure or even fear of succeeding. The lesson here is to sometimes keep those ideas/plans to yourself until you are ready to share it with the world. This will mean that no matter what opinions others may have, it will not affect how that idea/plan is executed!!

BELIEVE IN YOURSELF

Ultimately the most important statement ever! I feel this is something that should remain a constant!! Never stop believing in yourself not matter what! Believe in yourself even when you feel there is no way out or when life feels stagnant and you want to make a change but you’re unsure that you can. Everyone has the ability to change their life but first you have to change your mind and that begins with believing that you can do anything you set your mind to. You just have to visualise yourself achieving what you want to achieve or being what you want to be! Visualise till the point that it feels real and eventually with hard work and positivity, opportunities will arise to lead you to those dreams!
